Sugar syrups are extremely hot, and can remain hot once finished, for a long period of time. Be very careful when making them and don't attempt to handle the finished caramel until completely cold. Find out how to master simple cake decorating techniques such as swirls, dots and lines using a piping bag with the help of the BBC Good Food cookery team. TIPS: - Make sure to get the correct consistency of icing for piping, not too thick or runny. - Place required nozzle in piping bag. Fill with icing, twist and hold the end with one hand (usually your writing hand) and rest the tip of the bag in your other hand. Squeeze the icing from the top of the bag to make it flow through evenly. - Don't overfill your piping bag or icing will begin to ooze from the top. Squeeze from the top not the middle of the bag. How to spatchcock a chicken - BBC Good Food
The BBC Good Food team show you how to easily spatchcock a chicken - ideal for grilling or barbecuing. Flatten the breastbone with the heel of your hand so that the meat is all one thickness. - Use two skewers to secure the legs and keep the bird flat. Run the skewers diagonally through the breast and thigh meat. - Griddle, grill or barbecue for 15-20 mins per side or roast for 40 minutes (depending on size of bird).
